With these special flavours… Anjali Jain, who started this outlet, once worked in IT company Wipro. But I was so fond of the flavors that I left the job.
Anjali says- My father-in-law has been running a premium catering service in Jaipur since 1989. Our premium quality sweets were in great demand not only in wedding functions but also in festivals like Holi-Diwali. After receiving the order, we prepared the flavors from our home kitchen and started delivering them to people’s homes.
Hence the name ‘festival’
Due to quality and excellent taste the demand gradually increased. In such a situation, we got the idea that why not start our own outlet, where the most premium sweets of Rajasthan will be available. Working on this idea, we opened a shop named ‘Tyohar’ at Gandhi Path, Vaishali Nagar, Jaipur. Where not only sweets but also many varieties of food were brought.
The name ‘Tyohaar’ was kept because Rajasthan is known for its festivals. The tradition of exchanging sweets during the festival is also centuries old. On this theme, we opened the outlet and worked on quality along with taste. The best artisans were invited from different cities across the country. The flavors which are the specialty of the state or city, were prepared by the experienced artisans of that place. Called artisans from Bengal for Bengali sweets. Delhi’s chaat is famous, so expert artisans from Delhi were called and a complete menu of chaat was prepared.
Gold and silver sweets prepared after 6 months of research
Anjali told that I wanted to prepare a special sweet for my son Parshva, which would increase his immunity and benefit his growth. In such a situation, I started research on Ayurvedic things to find out which things can be used in sweets. Got to read a lot about Swarna Bhasma prepared from gold and Chandi Bhasma prepared from silver. Their cooling property is very important. Along with this, it is also very important for immunity, mental and physical health. In such a situation, the idea came that why not make something from it. After doing research for about 6 months, we prepared this recipe. The son was the first to taste Swarn Bhasma Pak prepared from Swarn Bhasma and Chandi Bhasma Pak prepared from Chandi Bhasma. He liked it. After this, reviews were taken from many people. Good results were seen in a short time. Then when we started the outlet, this was the first flavor of our premium quality sweets.
Gold and silver work is brought from Jain temple
Anjali told that there is a misconception among the people that gold and silver work is made from animal skin. I come from Jain religion, we take great care of it here. This is why to win the trust of customers, we source gold and silver work from Tapagachch Jain Temple located in Johri Bazaar, Jaipur.
Raw materials come from different areas of the country
Co-founder Kunal Jain told that he searched not only in India but also in other countries for the best raw material used in this sweet. He went to Turkey, London, Spain and Iran and checked every quality of spices, saffron and dry fruits. Tested. Finally started ordering saffron from Kashmir, Mamra almonds from Afghanistan and pine nuts from certified centers in Himachal Pradesh.
How is Rajasthan’s most expensive sweet prepared?
First of all, take good quality almonds. First of all, it is boiled in hot water for 15 to 20 minutes. So that its peels separate and it becomes soft.
Now let’s grate the peeled almonds. Now roast this mixture in desi ghee (A2 quality) for 15 to 20 minutes. Due to this, the aroma of ghee starts coming in it. Let it cool down.
For sweetness, a very limited quantity of sugar syrup is prepared and mixed. Now mix saffron soaked in water in it.
Now divide the prepared mixture into two separate vessels. Silver ash is added to one mixture and gold ash to the other. In one kilogram of sweets, 1.25 to 1.5 grams of ash prepared from gold is added. Whose cost is around 30 to 35 thousand rupees.
Now silver work is applied on silver bhasma pak and gold work is applied on gold bhasma pak. Lastly garnish with pine nuts.
Actually, both the sweets are served in the shape of Chakki i.e. Barfi at the outlet. But the method of cooking this sweet is like halwa. For this reason, Pak has also been used in the names of both the sweets.
Prices increase and decrease just like gold and silver.
Anjali told that the price of one piece of sweet made of golden ash is Rs 1550. There are about 40 pieces in one kilo of sweets. Therefore, the price of one kg sweets has been kept at Rs 45,000. The price of one kg sweet made from silver ash is around Rs 30 thousand. However, the price of this sweet also increases and decreases like gold and silver. Because the premium ingredients put in it are gold and silver, the prices of which go up and down daily. Right now gold and silver are at all time high. In such a situation, the price of one kg of gold ash sweets is more than Rs 45 thousand.
They give sweets packed in jewelery boxes.
Anjali told that as much as the gold and silver sweets are premium, its box has also been kept equally premium. These sweets are delivered in jewelery boxes only. Special boxes have been prepared from the vendor making gold and silver jewelery boxes. For those who want to taste this sweet, single pieces are also offered. Single pieces are also given in small boxes for keeping ring jewellery.
Left job for ‘festival’
Chartered Accountant Anjali Jain started her career with a job at Wipro. Husband Kunal Jain and father-in-law Atul Patoria already had a catering business. In such a situation, he left his job and joined the family business of premium catering in 2020. While taking the work forward, she also started looking after the event work. Now an outlet named ‘Tyohaar’ has been started for premium sweets. Anjali herself is the founder of the company and her husband Kunal Jain is the co-founder.
